My Go To Banana Bread

🌴🍌 Here's my go to Banana Bread recipe: super easy and everyone LOVES it including little Rexie!! 🍌🌴 We take it on all our road trips and it's a great recipe to whip up of an evening so you've got something yummy to go to the next day. 


This recipe is the base I used for Rexie's birthday cake which was a huge hit with all the kids! Note to self ladies: Leave some/a lot left over in the bowl so you can eat it whilst it's baking. I would probably eat the whole batch raw if I didn't have glaring eyes from my family waiting patiently for it be served up. 

Wet ingredients

  • 4 mashed very ripe bananas
  • 1/2 cup almond milk
  • 1/2 cup coconut oil
  • 2 teaspoons pure vanilla extract. ⠀⠀⠀⠀⠀⠀⠀⠀

Dry ingredients

  • 1/4 cup coconut sugar
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1 1/2 cups wholemeal flour
  • 1/2 cup LSA (linseed, sunflower, almond) meal⠀⠀⠀⠀⠀⠀⠀⠀

Directions

  1. Preheat oven to 175C. 
  2. Line loaf tin with baking paper and coconut oil so it stays in place. 
  3. Combine wet ingredients. 
  4. Stir in dry ingredients (sift baking soda, baking powder & flour). If your mix is a little to dry, feel free to add a little more almond milk & coconut oil in. 
  5. Pour into tin (leave enough to lick the bowl though as it's so YUMMY).
  6. Bake for 48 minutes.
